Palak Paratha Recipe : Palak Paratha , as it is commonly known is a paratha stuffed with chopped spinach leaves and a mix of spices. Palak / Spinach is a favorite in winter and can be used in various ways in different recipe. Palak / Spinach is a very versatile ingredient with not so strong in its own smell but tastes delicious.
Generally parathas are prepared either plain or stuffed. Palak can be used to prepare both of these kind of parathas. This recipe of Palak Paratha is a non stuffing palak paratha recicpe. I often prepare stuffed paratha but mostly with palak , I choose not to use it as a stuffing but mix it in the flour while kneading. Palak when stuffed in Paratha has to be consumed within few hours and that does not make it a good option for lunch box. As we have to add salt with chopped palak / spinach leaves, it starts releasing water and sometime the stuffed paratha in the lunch box becomes a bit soggy. So, when it comes to pack palak paratha for lunch box, mixing it in the flour comes very handy. its quick way of making palak paratha and it can be even kept for long hours and it does not turn soggy.

Palak / Spinach leaves have a lot of nutritional value. Palak leaves provide iron, magnesium, folates and calcium. Vitamin A and Vitamin K are two main vitamins that we get from palak. Though palak leaves are used raw in salads as well but in order to absorb the nutrients from palak it is better to eat it cooked. In this recipe of Palak Paratha, we will be partially cooking palak leaves first and than we will be using it in the palak paratha recipe.
Ingredients for Palak Partha Recipe
- Whole Wheat Flour : 1 cup
- Palak / Spinach : 1 bunch
- Salt to taste
- Turmeric Powder : 1/4 tsp
- Coriander Powder : 1 tsp
- Red Chili Powder : 1/2 tsp
- Ghee : 1 tsp to mix in flour
- Water for kneading dough
- Ghee / Oil : for cooking palak paratha

Palak Paratha Recipe , first of all we need to wash the palak / spinach leaves thoroughly. Sometimes palak bunch carry a lot of earth with it. In that case, washing once or twice wont be enough. To clean palak leaves thoroughly, we can first chop the leaves thin and later wash it under running water till it is completely clean, After that, we can just leave the chopped leaves soaked in water for 5 minutes and later just take a chopped leaves with the help of a strainer. Later we soak chopped leaves in hot water for 5 minutes.
If leaves are already clean, wash and soak in the hot water for 5 minutes for partially cooking. After 5 minutes, drain the hot water and keep the leaves aside.
Palak Paratha Recipe
When palak leaves are cool enough to handle, put it in grinder and make a fine paste of it. We do not need to add water to make paste. Because leaves are already kept in the hot water, the paste comes smooth even without adding water.
For this Palak Paratha Recipe, we knead the dough for palak parahta. Generally we knead a plain dough to make stuffed parathas but in this recipe we will be mixing the palak paste or puree in the dough. For 1 cup of flour, one bunch of palak leaves is enough.
Palak Paratha Recipe
Now we mix all the powdered spice. Add red chili powder, turmeric powder and coriander powder along with salt to taste. Using spices is a personal choice. If you do not wish to add the spices at all, just knead the dough without spices.
Add a tsp of ghee in the dough while kneading. If required , add little water to make the dough soft.
Once the dough is ready, cover the dough with a cotton cloth and keep it aside for 10 minutes.
Now divide the dough into small portions and roll one portion just like we roll chapati. While rolling , dust the dough ball with flour and roll it. Dusting the flour makes rolling easy. Once it is rolled to 4 to 5 inch size, sprinkle some ghee on it.
Now fold the rolled dough into desired shape and roll again. Meanwhile heat a tawa / griddle to cook palak paratha.
Place the rolled dough on hot tawa and let it cook till the top starts changing color. Flip the side and cook the other side as well. Apply ghee or oil on both sides of the paratha.
Cook the palak paratha from both sides evenly until brown spots appear on it. Palak Partha is ready. Now repeat the process for the rest of the palak dough.
